Hemmingway’s is a family-run business established by Brian Creedon in 2004. Initially, Brian started out with a seafood delicatessen.  A couple of years later he added a tapas bar, which in time was transformed into the intimate, cosy, little restaurant of today – very popular with locals thanks to its reputation for quality seafood. Brian was inspired by his childhood summers among the West of Ireland’s seaside fishing communities, but an equally important influence was his mother, a passionate home cook, who helped him develop a keen appreciation and feel for local produce and the seasonality of dishes and their ingredients. He believes in using fine ingredients to create delicious flavours, executed simply.
